A Perfect Lunch Menu for a perfect Sunday

I love Sunday specially Sunday morning..Right from the childhood I use to wait for Sunday for the obvious reason it use to be a holiday :D. I think Sunday has a special energy which no other day has.

Deciding what to cook for lunch on Sunday is quite irritating for me, I usually get confuse what to cook which is tasty yet less time consuming so that I can spend quality time with my husband and son.

Today I made a yummy lunch which my toddler son and husband both have liked, so I am sharing my menu and recipe so that even you can enjoy these delicious recipes with your family and spend quality time with your family..

The entire cooking has took almost an hour time only and at the end of the cooking I was able to serve:

Steam rice
Moong dal
Brinjal fry
Potato curry without onion
Tikki chaat
Ras malai and 
Butter milk.

Here goes my recipes and the ingredients..
I did multitasking ( woman's are good at that :D) 

I usually start cooking with sweet dish so that I can refrigerate it for sometime before serving 

Ras Malai :

Paneer for Rasmalai - Ingredients
Milk - 1 litre (preferably full fat cream milk)
Lemon Juice - 3 to 4 tbsp
All purpose flour - 1 tbsp
Cardamom powder- 1 tbsp
Sugar : 1/4 cup

Method:

Boil milk for 5mins, Once the boil comes then reduce flame, add lemon juice and continue string until the milk curdles.

Place a cheesecloth(make sure it is long enough to get tied up) over a container and strain the paneer. now wash the paneer under running water for at lest 2-3 times to avoid the lemon flavor. Bring the edges of the cloth to the center, tie and hang it to a handle or sink tap. Allow the water to drip by itself, do not disturb the setup for at least half an hour to 45.

Now the paneer is ready.Take it on a plate and knead it very well to remove any chunks. Now add 1 tbsp of all purpose flour in it and knead it well. Now make small balls or any shape or size of your choice. 

In a pressure cooker, heat sugar and water. When the sugar is dissolved and syrup comes to boil, slowly add the balls.Now, bring down the heat to low and close the lid. Let it cook on low flame for 11 mins usually 2-3 whistles are fine. They are cooked when they have considerably increased in size.
Add the cardamom powder and take off the heat.

For Malai:
Milk : 3 cups
Bread :1 slice ( white bread)
Cornstarch : 1 tbsp
Sugar :1/4 cup sugar, adjust to taste
Cardamom power: 1/4 tbsp
Pista : 12 piece


Method:

Remove the crust from all sides of the bread and cut the bread in small pieces.
Blend bread pieces, cornstarch, and a 1/4 cup of milk, making smooth paste and set aside.
Boil remaining milk in a pan on low flame, keep Steering milk as needed to keep milk from burning on the bottom of the frying pan. After milk comes to boil, let the milk boil for 1 minute. After 1 min add the bread mixture to the milk in the pan and cook for another 2-3 minutes, add sugar and pistachios and cook for 1 more minutes.
Turn off the heat and add cardamom powder.
Cool the milk to room temperature and pour into a bowl.Now mix the small rasgulla in the milk and garnish it with pista.
Your yummy Rasmali is ready Refrigerate it for half an hour before serving.

Ras Malai

Steam Rice :

I have used philips rice cooker for cooking  rice.

Ingredients:

Rice: 1.5 cup
Water : 3 cup water



Method:

soak the rice for 30 min before cooking. put the rice and water in rice cooker & rest the rice will take care.





Moong Dal
Moong Dal : 1/2 cup
1 cup Whey of paneer.( it taste really good)
Jeera : 1 tsbp
Ghee  : 3 tsbp
Onion : 1 tsbp
Garlic : 4-5
Turmeric powder : 1 tsbp
Red chilli : 1
Salt to taste

Method:

Wash dal properly and pressure cook it in 1.5 cup of whey salt and turmeric.
Add water, if necessary, to prevent drying out.
Cook it for 5-6 min. usually 2 whistles is enough.
Heat the ghee in a frying pan and add jeera.
Fry it for a minute on medium heat. add red chilli
Add onions now and fry them till they turn light brown.
Mix the prepared gravy into cooked dal.
Moong dal is ready.

Moong Dal
Brinjal fry:
Ingredient:

Brinjal : 3 nos.
Cornflour: 2 tbsp
Coriander powder: 1 tbsp
Turmeric Powder: 1 tbsp
garlic : 2-3 nos.
Oil : 3 tbsp for frying
Salt to taste.
Chat masala powder : 1/4 tbsp
Method:

Wash Brinjal, make a slit and insert the garlic into it.
Make a batter of cornflour, salt, turmeric powder, coriander powder, add 2 tbsp water into it.
now dip Brinjal into the batter and fry it on high flame for 2 mins now cover it and cook it for 3 more mins.

Brinjal fry is ready sprinkle chaat masala powder on it.

Potato curry without onion :

Small potatoes : 5-6 nos. boil some more potato for tikki chat as well.
Tomato : 1
Oil : 2 tbsp
Cumin seed : 1 tbsp
Mustard seed : 1 tbsp
A large pinch of asafoetida powder
Turmeric powder : 1/2 tbsp
Coriander powder : 1 tbsp
Chilli powder to taste
dry methi leaves : 1 tbsp
Salt to taste
Red chilli for garnishing.
Garam Masala : 1/4 tbsp

Instructions
Boil or microwave potatoes, Cool, peel and press them between your palm.
Heat oil in a pan fry potatos for 4-5 mins and keep it aside
now heat oil in a same pan, Add cumin seeds and asafoetida. When seeds splutter, Add tomatoes, all the spices (you can use curry powder instead of all these spices) and salt. add methi leaves. Fry until oil separates. Add potatoes and stir gently.
Add 1/2 cup of water(I like thick gravy, if want you can add some more water) and bring to boil.Now reduce flame and simmer it  for a few minutes.
Turn heat off and add garam masala.
Garnish it with red chilli and chopped onion








Tikki chaat

Potatoes: 3 small boiled
Chopped mixed vegetable (beans, cauliflower,carrot, pea) 1/4 cup
salt to taste
green chilli : 1
Breadcrumb : 1/4 cup
200 ml curds
mixed fruit 1/4 cup ( pomegranate, grapes,date)
3-4 tbsp tamarind chutney if available else you can use tomato sauce.
Dry sav or if that in not there you can used boiled sewai.

Chat masala, red chilli powder, jeera power for sprinkle.

Method

Grate boiled potato, mix chopped mixed vegetable salt and green chilli. now add breadcrum and make a dough.
Now make a tikki roll it on breadcrumb and shallow fry it on tawa for 3-4 mins turn and cook the other side for 3-4 mins
now take a bowl place tikkis, add curd, tamrind chutney, mixed fruit and dry sev or boiled sewai, sprinkle chat masla, red chilli powder and jeera powder.

Finally Butter milk, in my house no food is complete without butter milk, my son loves it so much that I can't impress him without butter milk ;)


Ingredient:
2 cup plain curd
Salt to taste
Ginger small piece
Green chilli : 1/2 piece


Put all the ingredient in the grinder, add 700 ml water.Blend it for 2 sec..


Finally  my dinning table look like this :


We had a wonderful lunch and three of us have enjoyed it thoroughly..
None of the item took much time to cook yet they were so testy.
